AI-powered Food Systems: Innovations in the Nexus of Food Chain & Sustainability

Artificial Intelligence (AI) is rapidly reshaping global food systems, with transformative implications for sustainability, nutrition equity, and public health. This Special Issue invites original research, case studies, and policy insights that explore how AI is driving innovation across agriculture, food processing, supply chains, and food safety—while also addressing the ethical, governance, and workforce challenges of its adoption.

Food systems sit at the intersection of today’s most pressing global issues—climate change, food insecurity, and nutrition inequities. Meanwhile, AI is accelerating across crop management, logistics, and personalized nutrition. Yet, current literature remains fragmented. This Special Issue responds to the urgent need for integrated, cross-sector dialogue and evidence-based solutions (FAO, 2022; WHO, 2023).

We aim to bridge disciplines and foster collaboration among researchers, practitioners, policymakers, and communities to illuminate both the promise and limitations of AI in tackling urgent global challenges such as climate change, malnutrition, and inequities in access to healthy food.

We welcome submissions that:

  • Showcase interdisciplinary research connecting AI, nutrition, sustainability, and public health
  • Analyse risks, equity concerns, and ethical challenges in AI-driven food systems
  • Highlight workforce development strategies for AI-enabled food and health systems
  • Present applied models and case studies demonstrating real-world impact
  • Offer actionable guidance for policymakers, industry leaders, and practitioners

Submissions will be selected through a combination of invited contributions and open peer review to ensure quality and diversity of perspectives.

Original Contribution

This Special Issue will be among the first to systematically link AI, food systems, and public health. It will:
•    Introduce new frameworks for responsible AI integration
•    Elevate underrepresented voices, including LMICs and marginalized populations
•    Propose ethical pathways for AI adoption that strengthen global health and sustainability
